Between Opulence and Art: Roman Banquets and their Influence on Modern Gastronomy

Chairman LUXONOMY™ Group
The Roman legacy in terms of luxury has left a lasting mark on Western culture. The standards of opulence and the emphasis on the accumulation of wealth and material goods have influenced our contemporary conception of luxury until the end of the 20th century. Ancient Rome has been a prominent example of how opulence and ostentation were an integral part of a society and its identity.
Banquets were an important part of Roman social life and were considered an opportunity to display pomp and social status.
During these events, the Romans enjoyed a wide variety of exquisite foods, fine wines, and sumptuous entertainment. The table was decorated with silver and gold tableware, and elaborate and exotic dishes were served.

The Romans valued aesthetics as much as taste. The food was prepared and presented in ways that surprised and delighted the guests.
Today, haute cuisine continues to emphasize the importance of presentation, with chefs viewing each dish as a work of art. On Roman tables, it was not uncommon to find dishes prepared with exotic and expensive ingredients, such as muraena fish, flamingos, or ostriches. These ingredients were imported from distant lands to impress the guests. Currently, ingredients such as caviar, truffles, and foie gras play a similar role in luxury gastronomy. The Romans were not afraid to experiment.
Some of their combinations, such as “garum” (a kind of fermented fish sauce), may seem strange today, but they demonstrate a desire to push the boundaries of taste. Modern luxury cuisine follows this spirit, combining ingredients and techniques from different cultures to create innovative flavors.
A Roman banquet was not just food; it was a complete experience. They were held in tricliniums, where diners reclined on couches, enjoying music, poetry, and often exotic dances. In today’s world, high-end restaurants often incorporate design elements, music, and ambiance to create an immersive culinary experience.
Both in ancient Rome and in contemporary high-end restaurants, the act of eating goes beyond simple nourishment. It is a ritual that celebrates abundance, culinary art, and company. What started in the opulent banquet halls of Rome has evolved and refined, but the human desire to combine food, art, and luxury remains as strong as ever.
